Hello lovelies! I hope you all had a fabulous weekend! I know that this recipe finds Winnipeg at the right time as our weather takes a bit of a dip this week. Last week we were graced with +20’s and this week calls for snow, slush, and temperatures below 0. Nothing surprising for Winnipeg, really. Believe it or not, I’m not too bothered about it because I have tons of work to do and that is much harder to do when it’s gorgeous outside! And perhaps some snow for our 1st NHL Playoff game at home will fall right into our Winnipeg Jets Whiteout theme we have goin’ on. Did I just talk about sports? What the hell. I know- I’m just as surprised as you are. Never in my life have I given a rat’s ass about sports…especially watching it on TV. I find it very hard to justify spending hours watching a game when I could be cooking, blogging, and grocery shopping, or sleeping. When our city got our NHL hockey team back, I didn’t care. Up until we made the playoffs, I have never watched a game. However, once we did make the playoffs for the first time in almost two decades, Winnipeg’s explosive energy was highly contagious. I was immediately attracted to the hype and I knew right away that I wanted to join our city wide cheerleading team. After watching the intense first two games that took place in Anaheim I realized that hockey is actually pretty fun to watch….my god, who am I?! Despite our loses, I have full confidence in tonight’s game especially with the roaring energy in Winnipeg right now. GO JETS GO!
Speaking of stimulating energies, that is my favourite part of using social media-to connect with others as passionate about health and wellness as I am. It’s inspiring being a part of a community that wishes to create a new movement. Although we each have our own visions and approaches in this field, we are all working together to change the face of healthy living. It’s been a thrill to watch health and fitness become a booming priority across the globe. How passionately excited I am about our Winnipeg Jets being in the playoffs is exactly how I feel on a daily basis about food and nutrition. Invigorating vibes always inspire others and that’s a big reason as to why I do what I do.
So without further ado, let’s get onto a big part of what I do which is recipe sharing! I knew I should write this recipe down since it was one of those meals I was planning on “winging” which well; we all know by now-turn out to be the best. Thank goodness I jotted this one down because I was pleasantly surprised with the outcome. The texture is hearty, full, and satisfying. The vegetables are very easy to exchange for whatever you wish to use. If you are paleo, simply omit the corn and pasta here. In place of the grains, I would suggest adding another chopped bell pepper or even chopped tomatoes. Vegetarians and vegans can easily enjoy this dish as well by omitting the beef and using one and a half cups of their favourite bean! I personally think black beans would complement the recipe perfectly. Enjoy!
Chunky Veggie Soup
- 1 cup brown rice pasta
- 1.5 lb. lean ground beef
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 carrot, chopped
- 2 cups green beans
- Kernels from 1 cob of corn (or 1 cup frozen kernels)
- 2 jalapeno peppers, chopped
- 1 red bell pepper, chopped
- 1 tsp. chilli powder
- 1 tsp. oregano
- 1 tsp. cumin
- 900 ml vegetable broth
- 14 oz. can of organic tomato sauce
- 2 Tbsp. tomato paste
- Sea salt and pepper to taste
- Brown the beef in a large stock pot over medium heat.
- After two minutes of cooking the meat, add the onion and garlic and cook for another few minutes.
- Add the remaining chopped vegetables and the chilli powder, oregano, and cumin and cook for another few minutes.
- Add the broth, tomato sauce, and paste and stir. Bring to a boil, cover the pot, and reduce to simmer for 30 minutes or until all the vegetables are tender.
- In the meantime, cook the pasta according to package directions and drain.
- Add the cooked pasta to the soup; stir it in and warm for another 5 minutes.
- Add salt and pepper to taste and enjoy!
