Guys! I have exciting news. My Nutty4Nutrition website turns one year old this month.
It felt like just months ago that I was slaving away over this laptop trying desperately to understand web design. I am the least tech savvy person I know so how I managed to create my own website and blog really does escape me. Squarespace was a great help. I don’t think I ever would have made it without their tutorial videos and tech support. My lovely friend Ashley (aka Rae of Sunshine) was also a tremendous help so thank you girl! It took days, weeks, even a couple of months to put everything in place and although it still needs updating and finalizing-I did it. I want to thank you all for supporting my journey and encouraging me to keep sharing my food, my thoughts, and my life. What started off as a platform to share recipes quickly turned into a place where I could also voice my inner and raw emotions. Writing has always been a healing method for me and ever since this blog space was up and running-I have been able to free myself of words that I could never somehow seem to voice physically. My posts about grief, indecisiveness on conceiving, my personal experience as a doula, and now my pregnancy have seemed to capture all of you more than I would have EVER imagined. These personal yet healing posts have you all engaging with me much more than any food entry has (and ever will) and for that, I am so thankful. I believe this is because supporters like knowing who is really behind an account or a website and I feel the same. I adore connecting with my readers as it also gives me the chance to also get to know you.
Originally I wanted throw a friends and food blogger birthday party to celebrate Nutty4Nutrition.com’s first year but unfortunately my schedule right now has left me no time for that. I envisioned a cute and rustic themed brunch party where I would invite my closest friends and family who have showered me with nothing but love and support. I also wanted to invite influential and inspiring food bloggers and entrepreneurs within my city that I have made connections with over the years. I wanted to throw an ultimate “thank you party” but it may have to wait until next year which is ok too. However I couldn’t NOT celebrate which leads me to this amazing recipe I made thanks to Meghan Telpner. This raw Key Lime Pie is a recipe from her newly released book, The UnDiet Cookbook. A recipe from Meghan is always a guaranteed success and I wanted the best of the best for my celebratory birthday dessert.
The UnDiet Cookbook Review
It was through Chapters Indigo where I technically was introduced to the nutritionist that would change my life in ways I never could have imagined at the time (like creating my own website for example). I was browsing through the new releases in the healthy food and diet section and a particular vibrant book caught my eye. The cover was fun and inviting and the title was short and sweet but oh so intriguing. I picked up the freshly printed page turner only to find loads of information that sparked my interest along with pictures and recipes that made me lustfully lick my lips. This was the day that I bought UnDiet by Meghan Telpner.
A lot has happened since the purchase of UnDiet which further ignited my passion for cooking, baking, and believing in the holistic powers of whole foods. In spring of 2014 I took a 14 week online course on culinary nutrition offered by Meghan herself. To this day, the Academy of Culinary Nutrition has successfully guided over 700 students from across 32 countries with profound life-changing knowledge. A certification from the Academy of Culinary Nutrition not only serves yourself but allows to you to expand and offer further qualifications in professions including but not limited to personal trainers, health coaches, nutritionists and dieticians, recipe creators and developers, naturopaths, chefs, food bloggers, and so on. Her course stands out from anything else I have ever seen as it combines nutritional theory with hands on culinary development that focuses on healing foods. Her program allowed me to create meals that both scientifically and holistically support my health. This investment also provided me with education on teaching others (which allowed me to blossom and host my very own workshop) and offered me in depth information on the many angles where this this passion could be turned into a business. These are all things I would have never anticipated learning and it still surprises me where our passions can lead us in life.
Shortly after graduating as a Culinary Nutrition Expert, Meghan announced that she had decided to create an UnDiet Cookbook. Of course, I was ecstatic. After creating the recipes in her original UnDiet copy and fabricating her recipes throughout the course I knew that I loved her cooking and baking style. I had no doubt that her recipe book would be of the highest standards and as soon as I opened it I was nothing but impressed. Meghan’s recipes are mostly made with few and easy to find ingredients and the directions are always easy to understand and follow. She is the ultimate mastermind as she always manages to offer us holistic healing with every bite of each and every recipe created. The design of this plant-based and gluten free cookbook is stunning and the pictures are completely mesmerizing. There are over 130 recipes that range from drinks, breakfast, lunch, diner, snacks, condiments, and desserts. My personal favourite part is that The UnDiet Cookbook is also educational. It wouldn’t be true to Meghan to create something without an educational spotlight. The beginning of the book simply breaks down the highlights of nutrition teachings and of course leaves us with links and further references for us to follow up on should we choose to.
Because I am such a lucky duck, Meghan actually sent me two copies of her cookbook. Obviously I am keeping one for my collection but the other one I am giving away (just in time to celebrate the site’s birthday with you all)!

Rawmazing Key Lime Pie
Soy-Free, Grain-Free, Dairy-Free, Egg-Free, Raw, Vegan, Paleo
Prep Time: 25 minutes
Setting Time: 3 hours
- 1 cup dried dates
- 1/2 cup whole almonds, coarsely chopped
- 1/2 cup whole pecans, coarsely chopped
- 1/4 cup unsweetened shredded dried coconut
- 1 Tbsp coconut oil
- Pinch of sea salt
- 2 cups cashews
- 3/4 cup fresh lime juice
- 1/2 cup maple syrup
- ⅓ cup melted coconut oil
- 1 tsp matcha powder (optional for color only)
- 1 tsp pure vanilla extract
- 6 key limes, sliced (optional)
Make It Like So:
1. Put all the crust ingredients into a food processor, and process until the ingredients can just stick together. You shouldn’t have a gooey mess. Stop and scrape down the sides as needed. Press the crust mixture into the bottom and up the sides of a 9inch glass pie dish.
2. Place all the filling ingredients in your high-speed blender or food processor and blend until the filling is completely smooth and creamy.
3. Pour the filling evenly over the pie crust, smooth with a spatula. Place the pie in the freezer covered to set for at least 3 hours, or overnight if possible.
4. Let the pie sit at room temperature for 10 minutes and garnish with key limes before serving.
