No matter how healthy we aim to eat, and genuinely enjoy doing so...there will always be staple comfort foods. Puffed wheat squares were and always will be one of mine. The sweet gooeyness that just melts in your mouth....it beats rice crispy squares any day, just sayin.'
So for fun one day, I decided to look up the recipe for a traditional puffed wheat square and I decided that the recipe looked easy enough to transform into a healthier version of the sweet treat. After an embarrassingly epic fail, I tried just one more time. Believe it or not I knew exactly where I went wrong which never happens. My food fails are usually a mystery because I always master everything so when things do go wrong, it is clearly the fault of anything and everything else...like the climate, the quality of ingredients, faulty measuring devices, or the pan...stupid pan. Haha, please note the exaggerated sarcasm...it is only one of my many characteristics...you'll get to know this quickly I promise.
Back to the recipe...so the second time was a charm. Perfection. Well, in my opinion anyway. I converted this treat into a gluten free, protein packed version using all natural sweeteners that offer us nutritional benefits all while satisfying those demanding sweet teeth of ours. The BEST part about it- It literally takes 5 minutes to prepare and for that reason, it is my go to glorious comfort food snack. I hope you all enjoy it as much as I do.
*You'll notice this recipe involves a protein powder which is rare for my recipes. My preferred powder to use is About Time's Vegan Powder. The truth is, I have experimented plenty with all types of protein powders in my baking and cooking and this is the only recipe that made the powder cut. There were also a few random pancake recipes as well, but generally speaking I save the protein powders to enjoy on their own as a shake with an unsweetened almond milk and cinnamon or in the occasional smoothie.
Protein Puffed Rice Squares
*Makes 9 squares
- 4 cups puffed rice (or puffed kamut if you desire)
- 1.5 scoops of About Time's vegan chocolate protein powder
- 2/3 cup honey (try coconut nectar for a vegan recipe)
- 1/4 cup coconut oil
- 1/4 cup ghee (ghee is clarified butter. Feel free to use an organic full fat butter or even more coconut oil for a vegan recipe)
- 3 tbsp. cocoa powder
- 2 tsp. vanilla extract
- Mix the puffed rice and protein powder in a large bowl and set aside.
- Heat all the remaining ingredients in a pot over medium heat. Stir frequently until completely melted and combined.Pour the heated wet ingredients over the dry and mix together.
- Pour into 8x8 baking dish (lightly greased) and press down to achieve an even foundation.
- Refrigerate for at least 30 minutes and cut into squares.
- Keep stored in the fridge (or freezer for long term storage).
